banana blueberry oat pancakes

Let's be real, pancakes are just the greatest breakfast/brunch food there is. And maple syrup? so good. And isn't breakfast supposed to be the most important meal of the day? Oh yes. I see a lot of people either eating a bowl of cheerios with milk or just a cup of coffee. These are foods that will suffice in the short term but soon you'll be crashing and in need of another pick me up. Pancakes usually fall into that unhealthy, indulgence category and are only left for weekends or special occasions. These pancakes are dairy free, gluten free, sugar free and vegan (of course) and packed full of protein, healthy carbohydrates, grains and healthy fats!! epic. And they are also really, really yummy and delightful. They are filling but wont give you that lethargic feeling after a big meal. Treat yourself this week and make some deliciously, healthy pancakes for breakfast, lunch, dinner or dessert. Or all four. 


1 cup of oats
2/3 cups of buckwheat flour
2 ripe bananas
2 tbs of maple syrup
1 tbs of chia seeds
1 tsp of cinnamon
a pinch of salt (pink himalayan)
shredded coconut (if you'd like)
coconut oil


-Put the oats in a food processor and grind until it is the consistency of flour
-Add the buckwheat flour, bananas, maple syrup, chia seeds, cinnamon and a pinch of salt to the ground oats in the food processor and blend until it is a smooth batter
-Add in a large handful of blueberries to the batter. I like a lot of blueberries so do more or less depending on your preference.
-heat up a pan on the stove for a couple of minutes. Once it is hot, melt a teaspoon of coconut oil on it and spread it around so the entire pan is coated
-Scoop a spoonful of batter onto the pan. I prefer small pancakes, and cook about three pancakes at a time
-Be patient. Let the pancakes cook before flipping them. This should take about a minute
-Let the pancakes cook on both sides. When they are cooked all the way through, put them aside on a plate
-put another teaspoon of coconut oil on the pan, and repeat until all the batter is gone
-Once all the pancakes are cooked, I sprinkled some shredded coconut, fresh blueberries and maple syrup on top

**Also, the buckwheat flour is darker than regular flour (because it's not stripped of all of its goodness) so, therefore, the pancakes will be darker. These gems are not burnt!**
