cinnamon apple breakfast bowl

It is somehow already mid November and I'm not really craving my fruity, morning smoothie anymore. I am beginning to crave something warm and hearty. In Michigan, where I live, it has been blue sky and sunny everyday. I have been making this for breakfast and sitting on my balcony watching the leaves falling off the trees while I eat it- it is so marvelous. This bowl of cinnamon oatmeal with some of my favorite ingredients decorated on top is not only pretty to look at but it makes me feel satiated, energized and ready for the day. Oats are whole grains. Whole grains are carbohydrates. Our bodies run on carbohydrates- that is how we have energy and a clear mind. Carbs are not the enemy. Processed carbs, maybe. But whole grains are our most trusted ally. Oats also have a lot of fiber and we all know that we need plenty of that to keep our machines running smoothly. Apples are just an awesome fruit. "Eat and apple a day to keep the doctor away" is not just an old saying. One apple has about 15% of your daily value for vitamin C to give your immune system an extra boost. Cinnamon is one of the most amazing and healthful spices out there. It is loaded with antioxidants which are our friends and keep us looking and feeling fabulous. Cinnamon also helps with inflammation that can fight infections and repair tissue damage. Sounds like a great way to start the morning. 


2 cups of water
1 cup of almond milk
2 cups of oats
dates, pitted
walnuts, chopped
almond butter
maple syrup


Begin to make the oatmeal by boiling the water and almond milk in a pot
Turn the stove to medium heat and add in the oats and stir continuously. Let cook for about 6 minutes until almost all of the liquid has evaporated
Stir in a teaspoon of cinnamon and let cook for 1 more minute
Once the oats have finished cooking, put them into a bowl and add the toppings
Arrange chopped apple, banana, walnuts, sliced dates on top
Drizzle on almond butter and maple syrup
Sprinkle with cinnamon before serving
